Story of the Week 10/8/18

Today I made myself a fancy breakfast consisting of a poached egg on avocado toast with guacamole and chipotle sauce. It is one of my favorite healthy breakfast options, and is absolutely delicious.

My Guacamole Recipe:

  • 1 avocado
  • 1/2 lime
  • salt to taste (about 2 tsp)

Cut and mash the avocado, squeeze in the lime, and mix in the salt. Cover with plastic and let sit at room temperature for 15-60 min.

Julia Child’s Method for Poached Eggs

Bring a pot of water to a boil. Make a hole in the eggshell with a pin. Place the egg (with the shell) in the boiling water for 10 seconds. Remove the egg from the water, carefully. Once the egg is cool, crack the egg into simmering water and let poach for about 3 minutes.

Chipotle Sauce Recipe

  • 1/4 can of chipotle chilies with adobo sauce
  • 3 Tbsp olive oil
  • 2 crushed garlic cloves
  • 1/2 onion
  • 1 tsp smoked paprika
  • 1 Tbsp cumin
  • 1 Tbsp salt
  • 1 Tbsp brown sugar

Use a blender to combine
